Cauliflower Shrimp Rice and Veggies

Here’s a very simple and quick dish to make ahead of time and eat throughout your week. Trader Joe’s is my favorite store to shop for the frozen vegetables listed in this recipe.  I created this dish as a healthier, low-carb alternative to traditional rice.

  • 1 bag Trader Joe’s Cauliflower Rice (frozen)
  • ½ cup Trader Joe’s Organic chopped Spinach (frozen) or substitute Broccoli
  • Chopped Carrots (about ¼ cup)
  • Chopped Red Peppers (about ¼ cup) 
  • Chopped Red Onions  (optional or about ¼ cup, if used)    
  • Wild Caught Shrimp, cooked (optional or about 1 cup frozen)  

Cook your shrimp while making the dish.  

Place in pan 2-3 tablespoons of extra virgin olive oil on medium-medium high heat.  

Pour the bag of cauliflower rice into pan, then add the ½ cup of chopped spinach or you may portion to your liking to not overtake the amount of cauliflower. Add the chopped carrots, peppers and onions or more to your tasting. Add cooked shrimp. 

Stay with the dish and stir to prevent sticking. Cook and be done in 15 minutes or less. This is a great dish to store and eat during the week.
